Healthy breakfast

In my journey to lose wait, in reading every fitness mag I can get my hands on, I've discovered that breakfast is seriously important to boosting your metabolism. Unfortunately, I haven't found too many good breakfast recipes that can be prepared a day or two before and then eaten as I'm getting ready in the morning.

I've made:
Corn muffins (with whole wheat flour for the fiber)
Ginger muffins (again, with whole wheat flour)
Fruit salad

I want to try:
Power scones (recipe will be posted later)

I don't like:
Eggs
messing with a blender in the morning to make a smoothie

What's your breakfast of champions?

Cinnamon whole wheat apple pancakes or
Banana whole wheat pancakes (both from scratch)

with

Smart "Bacon" & Orange juice

or

Cinnamon Life cereal w/ Vanilla Silk

or

Quaker Oats (quick oats 1 min) sprinkled with Florida Crystals & Cinnamon w/ Orange juice(blended with vanilla soy protien powder)

or

fruit and toast toast (made by skillet with Soy Garden veggie butter)

it's so funny, how when you are used to one way of things...people that do it another way are like, freaks...at home @ my parents house...i never ONCE had box pancakes...like bisquick...or instant mashed potatos..ick...and my inlaws love it. i think it's so gross. my husband likes the homemade stuff BETTER...but still LIKES the fake stuff...i find it sooo aggrivating.

I can't stand instant mashed potatoes! Just the thought that it's supposed to be potatoes, but dried... gross. Bisquick, however, I think of like brownie mix, which I have no trouble using. I could blend the flour, baking powder and flavors by myself, but if it's already boxed, why bother?

98% of the time...homemade tastes better and is healthier. i've never actually TASTED bisquick pancakes...it's just my perception.

I only recently found a recipe for homemade pancakes - although I think my dad used to make them from scratch...

the basic recipe my mom always used (and i use) is the better homes & gardens cook book recipe. (I LOVE that cookbook) but my mom puts ricotta in her pancakes...it makes them sooo good.

i love putting sliced apples in my pancakes or bluberries.

slim fast. it's filling, cheap & has lots of vitamins. and it doesnt taste too bad. i'm going to the Outerbanks in 3 weeks, so i'm going to be in a bathing suit for the week...figure i could stand to loose a few poundages.

other than that...my fav. healthy breakfast is bite size shreaded wheat, with some walnuts (or sliced almonds) & fresh fruit...and if i dont have fruit @ home...i put honey on it. it's so good & very filling.

Corn Flakes, juice, sometimes a muffin. egg white omlette w/cheese adn broccoli, oatmeal, hard boil eggs....

everything just depends on my mood, i LUV breakfast so i'll take time to make it!
