Vegetable dishes
I'm always at a loss of what to make vegetable-wise. I looooove veggies, but I can never find any good recipes. Any ideas??? I made broiled zucchini boats last week and they were super yummy! Neil really likes squash.... got any recipes?

Squash is good roasted with garlic and maybe thyme. You could also steam or boil it most of the way through and top it with toasted pumpkin seeds, since it's autumn. Or, if he approves of the texture, you could roast it through and then puree it with garlic and parmesean cheese - it'll make a thick yet chunky side with a tang from the cheese. Also, I think all veggies like that are great grilled with just a little olive oil on top. You could top it with a fresh pesto, which is just toasted pine nuts (or any nut you like) pureed with fresh basil, garlic and olive oil.

one of my favorites is so easy, but so good....steamed broccoli, and then make a dressing of lemon juice and minced garlic and pour it over the broccoli...it's so good. i usually let it chill in the fridge..it tastes better cold to me.
Yeah, my mamma makes it like that, it's so good! I feel so ashamed, almost fully italian and not a cooking bone in me.
