Chicken Enchilada Soup
by I'm chowin down on some baja chicken enchilada soup from Quick Check right now. I'm not so great at making soups, but I want a good recipe for this. Anyone have one?

What's in it? Chili flavors are just garlic, onion, chili powder & cumin. And of course the beans and tomatoes.

it's a shortcut. kinda scary, but it is. i didn't like canned chicken for a long time, but for apartment dwelling and small portion cooking it can make things easier. like any shortcut tho it's just not as good as the fresh stuff. it's okay for like chicken salad or something.

They probably just get a ton of it from the parent company; I doubt they make it themselves and/or know what's in it.

i was gonna say when i saw the title, "i always get chicken enchilada soup from quick check." its good! and i think they make pretty decent chili. currently i'm trying to get my boss to make this for the restaurant but he's spanish and says he cant find a good recipe. i'll keep ya updated.
