There's a local chili cookoff near my house this February, and I want to submit a chili... Hey, I'll admit it - I want to win! So over the next few months, I'm going to play with some ingredients, ask you guys for suggestions in this thread, and then we can all enjoy the final recipe created.
First, I'm going to post some ingredients I'm going to throw into the chili pot this weekend. Then I'll post the first recipe on Monday after I've played around.
Interested in Using:
Manteca (aka lard)
Chocolate
Dried chipotles
Red wine
Dried porcini mushrooms

I made some serious kick-butt chili yesterday. I used chuck cubes (as per Forreste's suggestion) and I'm so glad I did! Very yummy. I browned the meat first (in batches) then sauteed onions and garlic, then added tons of cumin & chili powder, deglazed the pan with red wine, added my tomatoes, tested for seasoning again, then added the meat back in and let the whole thing braise in the oven for about 2 hours, until the meat was super tender. Then I added the beans and let it sit with the top on for another 20 minutes or so, until the beans were flavored slightly. I also used some chipotles that I dried myself, and I'm really impressed by the layer of flavor they added. The chili powder gave an up front spiciness, but the chilis gave a little warmth in the back of your throat, so it was well-rounded, in my opinion.
I'm going to serve it over kamut, which is a whole grain with a texture similar to brown rice. It's much healthier than rice, so I'm hoping it'll make the meal more complete, along with a salad. (It takes 2 hours to cook, though, I understand, so that's annoying.)
I'm going to try chocolate with my next batch; we'll see how it turns out.
the last time i was at whole foods they had chocolate with these ripened and dried chilies baked into the chocolate bars.
So I'm totally bummed. The place in my town that was holding the chili cookoff originally had it on their website, right? I called the number on the website in like, november, soon after I created this thread. No one called me back and the website was shut down. I thought they canceled the cook-off. I'm driving around a part of town where I rarely go this weekend, and there's a huge sign that says "Chili Cook-Off Saturday!" I checked the website, which was magically back up, and there's no number to call to enter (not like I'd enter now with zero preparation). All this pontificating about the perfect chili and I can't even enter the contest!!!!

i made chili the other nite and i put some mango/lime/cilantro salsa in it
oh man, it was good
it was ground turkey, organic canned diced tomatoes, chili seasoning, a couple chopped jalapenos (with the seeds mostly taken out), some chopped onion, green giant or whatever mexi-corn, and kidney beans, and some cumin and regular black pepper
and then i added a couple spoonfuls of the mango/lime/cilantro salsa

i wish i had actual lime juice and cilantro to bring out the flavor a little more
What I'm going to try this weekend:
1. Marinade chuck cubes, trimmed, in burgundy wine and a few thyme sprigs overnight.
2. Pat cubes dry, discard wine and herbs. Salt, pepper and flour cubes. Warm olive oil and a little manteca in a large pot. Brown meat in batches and reserve.
3. Add more oil to pot if necessary; saute 1 large onion, finely chopped, until translucent. Add 3 cloves garlic, finely chopped. Add chili powder, cumin, salt, pepper, paprika, red chile flakes, 2 bottles of beer and a few cans of chopped tomatoes. Bring to a boil.
4. Add meat back in and simmer for about 2 1/2 hours. Add dried chipotle. Add 1 can black beans or kidney beans. Simmer for 1/2 hour more (or so total cooking time is about 3 hours). Add 1/4 c. of bitter chocolate and stir to blend.
5. Serve over white rice and enjoy!
yum, this sounds good, let us know how it turns out. i think it would be so much fun if we lived closer, we could have cooking days. haha
On rainy, cold days like today, all i want to do is stay home and cook & bake.
Oh man, that would be so great! I keep daydreaming about running a catering/personal chef biz and just cooking all day. Well, cooking and keeping meticulous account of time/travel/expenses for taxes. So I guess I either want to be a caterer or an accountant. :P

It's completely lame that I still haven't made this. It would probably freeze really well, too. I don't think it'll happen this weekend either, because we have our circuit assembly. I've also had some roasted chicken cubed in tupperware in my fridge for like a week, waiting to be put into soup. I've been so lazy about cooking for the past couple weeks.

This pub up the street from my house just gave out coupons for a 6-pack of yuingling (sp?) and an order of wings for $9.99. I will be partaking. It's fun to drink beer while making chili too. :)
so, i made turkey chili last night for dinner, and it was BA-GANGING! haha

i looked up multiple recipes, and used a bunch of stuff from all the them..basically...1.5 lbs ground turkey, 14 oz can crushed tomatos, 14 oz can red kidney beans, 1 onion, 2 cups frozen corn, lots of cumin and paprika, (a little more than 1 tbs each) a little oregano, red pepper flakes, tabasco sauce, salt, pepper, 1 bottle of yuengling lager, 2 cups chicken stock.
and i made corn muffins to go with it..(and of course shredded chedder and a dollop of sour cream) it was so good and easy, and healthy cuz it's turkey! pow pow!

Hahaha - I'd never heard this term used until you linked it above. I thought "flaming" referred to Supastar's personality traits.
it's a more flavorful, slow cooked chicken broth. but chicken broth is fine.
if you really are going to make it: brown the meat first, (drain the fat) add the onion and let it soften for like 2-3 mins, add all the spices, then add the beer, and let that all but evaporate...about 8 mins, add the chicken stock, and then the corn so it stays nice & crunchy, and let it all meld together for like 15 mins. and you're good to go.
why don't YOU make this FOR your wife? haha

If I'm lazy, I'll do ground, but I really want to switch to the realm of chuck. It's just a pain to trim off the fat.

Butter is good, but not in excess for chili....
Di, try a bit of Cincinnati flavor....experiment with a bit of cinnamon and/or brown sugar....sounds odd, but if you pair it with the right spices and other ingredients, it will be awesome.
kevin mcalerney made some chili last night that had beer in it. yuengling actually. kinda funny since we were just talking about that. and it was GOOOD. with sour cream and cheddar it was even BETTER

ewww lard, chocolate and chili doesnt sound too appealing. BUT those chili cook offs there are some insane ingredients going on.

hmm, Guinness for chili? i dunno, i've never had beer in my chili, but i'd say an amber lager might go good in the recipe. Yuengling maybe. or maybe Guinness would be good, reduced?
Well you said you liked beer - I thought you meant in it! Corona's too light in it for my taste, guiness makes it, I dunno, thicker? It feels heavier, more stick-to-your ribs.

I don't know - hot and sweet chocolate is very aztec. And godiva just came out with a line of spicy truffles. I think it could be balanced well.
