Thai curry chicken explosion LOCKED

so i made this thai dinner last night that you all must get your wives, girlfriends, ho's, mothers, etc. to cook for you if you like thai food

1 can of lite coconut milk, i think it was the 12 or 16 ounce can, i made it in my large deep frying pan

add the following - chopped up - one large sweet onion, one yellow pepper, one green pepper, one small zucchini and small yellow squash, chopped loosely into nice large pieces,and a can of pineapples, with the juice

let that simmer for a bit

add red curry and/or "thai seasoning" (i added A LOT but add to taste)

add chicken and if you like, a couple teaspoon-fulls of natural peanut butter

simmer

simmer

simmer some more

eat over delicious brown rice

enjoy

weeeeeeeeeeeeeee

i don't know if this is a real thai dish or if i just made it up, but it was delicious

yummy! i love thai curry chicken puffs. anytime i see them on the appetizer list-i order. they never fail me.

i made this last night!! it was soooo good! after we were eating, it was kind of sweet, and i realized what i did...i used coconut cream instead of coconut milk. it was still so good, but made it a bit too sweet (and not low-fat) so i gotta make it again the right way.

ahhh yeah coconut cream is the sweetest thing ever hahaha

the regular coconut milk is also like too thick

the lite milk is juuuust right haha

condensed milk.. alwayas makes me think of this desert my sister used to make that we called "coconutties" it was like a coconut delicious desert oh man i miss it

yeah i used the chunky natural peanut butter, the chunks of peanuts really were delicioso

and the onion make sure it's big pieces so they are super flavorful yummmmmmmmmmmmmmmmmmmmmm

i wish i had more of this haha

i love thai food but i find the whole nuts in the food to be so bothersome. nuts are a snack and neither do they belong in ice cream.

but they never stay on the fork/spoon. and then there is just a bunch of them at the bottom...ugh. i love their taste but not the presence.

also prolly just more zucchini/squash type things would work

snap peas sound real good too

ooh maybe top the whole thing with sprouts or whatever that stuff is called.. is it sprouts.. liek the stuff they use at thai food places
