and actually it's funny because I agree with vegetarianism totally, we were talkinga bout all the crap that's put in meat, and she said that the book "fast food nation" was what made her turn vegetarian because of how graphically it describes the process that fast food goes through, etc. and I was telling her how I only buy organic eggs and I try to buy organic meat when I can, how i only feed my animals organic/holistic food, and how I have my own organic garden in the summer etc. etc. so it's like we agreed on everything pretty much
and then i ate my chicken dinner
and everything was fine

I didn't mean to start a whole 'vegan/vegetarian' debate, here. I really just wanted alternatives to dairy, which is, in essence, vegan dieting. I still plan to eat meat and put eggs in my cakes, but I'd like to have suggestions for alternatives. I didn't mean to cause discord.
I wouldn't recommend to serve soy cheese at your next dinner party. The consistency is bizarre. The american style prewrapped slices are fine and they melt nice. I bought soy feta, haven't tried it yet.
I love rice dream milk. I have tried plain and vanilla, no complaints.

I am vegetarian. Not ALL vegetarians announce that they don't eat meat. I Became a vegetarian because I don't like to cook meat and considering how much I exercise, I needed to look into other alternatives for protein. It has nothing to do with ethics/animal-rights, and I have no issues with someone eating meat in my presence. However don't roll your eyes because I happen to really like tofu. Then again, I hate when what I am eating becomes a center for discussion. It makes me uncomfortable. But when you are the one passing up food in a group of people, you usually end up having some explaining to do.
Vegan living is a bit hardcore and maybe a bit unbalanced (as I see it). I have looked into it and its a bit out there for me. I have tried a lot of the food and it is pretty good. I am not going to stop wearing leather or wool or anything made with animal products. I don't have the time to research every thing I use. But Vegs aren't the only ppl who are annoying about food. What about those always talking about their newest diet?
If you come across an obnoxious Veg, tell them, "good for you that's your choice not mine". If they are trying to be discreet about not eating meat (that rhyme wan't on purpose) just leave them alone, they aren't hurting anyone. If you find something you like to eat go for it. Don't fault someone if they do or don't.

Toned muscles have very little to do with diet. You could eat nothing but salads, but still look lumpy unless you work out.
thanks captain obvious. I'm saying if you've made the commitment to the lifestyle, you should be working out. I see a lot of vegans (not vegetarians) who are in worse shape than i am

what annoys me about vegetarians/vegans is that the whole world needs to know that they don't eat meat
like if you go out to a restaurant with a vegan they're not just gonna order a salad or a pasta dish
they're gonna make sure everyone at their table knows, that they will not eat meat

what? no way. you HAVE to ask stuff...i remember ordering potato soup and asking them not to put any bacon on it. and it usually will then come up in the convo..the "are you a vegetarian" because...you requested that...
yeah and this is annoying to me haha i'm sorry.. but it's like unless you have FOOD ALLERGIES it's annoying to me to call attention to that stuff
i used to work with a girl that was vegetarian and she would do crap like "can i have the chicken ceasar salad without the chicken" just annoys me haha
so then what the heck would you do? sit there and pick the bits of meat out? that's retarded. if you request salad dressing on the side, is it annoying cuz everyone will know you are watching your weight? haha
i duno it annoys me .. it annoys me even more when people do it randomly. Like you order a bunch of apetizers with a group of people. No need to say WHY you are choosing to eat the spinach dip and not the chicken wings. And WHY would you feel the need to anounce to the table that your'e vegetarian and you'll only eat the spinach dip.

it's so funny cuz you sound exactly like Austin. he has such disdain for people that don't eat meat. i think the fact in itself is annoying to him, but more so because of what you're saying, like they make a show of it. that is kind of annoying, because then they really are doing it just for the attention.
yeah.. and it's weird this is really the only thing that annoys me this much. I don't care if people talk about what they prefer to do or not to do but when it comes to eating meat it's sooooooooooo annoying to me haha especially when they get preachy and try to get you to stop eating meat too or spewing their opinions on how we're not gonna eat meat in the new system then i just know we are not going to be friends and it's time to cut off all contact

HAHHA kam you are one of the raddest chicks! i agree with you on this. you know what also annoys me, is when someone is having a dinner party and the vegan/veggies have to make a HUGE deal that they dont eat meat dairy, etc and the poor hostess has to cater to their needs. if you dont like it dont eat it there are usually plenty of side dishes that im sure you could eat.
my friend had a dinner party on saturday and one of the sisters was complaining about a dish he was going to make cause she was vegetarian so poor thing was asking everyone what they liked. he asked me if i minded that he was going to prepare seafood (cause i LOATHE seafood) i said "hun, i dont care what you make, if i dont eat that dish, dont worry about it. im sure there's something else i'll enjoy. im stoked to even be invited and enjoy the company" just dont put peeps out esp when they're nice enough to invite you over and put themselves out ya know.
yeah EXACTLY. I mean sure if i was gonna have people over that I don't know very well, I would ask, "hey, any food allergies, preferences" so i don't make a big thing of thai peanut encrusted chicken if they hate thai food are allergic to peanuts and are vegetarians

My theory is be nice to the vegans, because i love to eat cows and chickens and lamb, and they have the same diet. so when the animals run out, guess who us meat eaters are going after.
I was channel surfing last night and I happened upon a chocolate frosting recipe by a vegan chef: Basically, it looked like she processed tofu with vanilla and gelatin in a food processor until smooth, then she added warm, melted dark chocolate and let it process for a few minutes until it became lighter.
I'd like to start using more tofu; it's so healthy and takes on whatever flavor you give it. I think it would be good marinated and then pan-fried until crispy.
you should check out some indian recipes. i had this amazing one the other day where it was all spices and tomatos and i had no clue that the stuff was tofu except for the fact that it was perfectly shaped cubes. incredible!!
I'm actually not that into indian food. I've made a couple dishes with more indian/eastern spices, and they're just not my cup of tea.

question: why the HECK would you want to do this? of course you CAN do this, but it's NOT going to be as good, and if eating animal products doesnt go against any ethical beliefs or dietary restrictions...WHY?! haha
Well A) I've never really liked milk or cheese; B) it almost always hurts my tummy; and C) it's probably pumped full of hormones. I've always looked for something to replace ricotta. I know I'll never want to replace parm or pecorino romano, though.

didn't you say you were from Newark? Plus do you want help or not? My mom uses this since ricotta makes her sick. It doesn't taste the same but its not bad.

No, no, these aren't bad suggestions, but they're still dairy! I'm trying to figure out non-dairy substitutes.
I'll start: I'd like to come up with an alternative to the ricotta in ravioli. (I realize my italian grandmother is rolling over in her grave). I'm thinking right now that a mixture of low fat ricotta and tofu might work. I wonder if I soak the tofu in cold water with fresh herbs (like parsley and sage), if it'll pick up enough of the flavor to create a little burst in the ravioli. Also, would it crumble well? Also, what could be used besides egg to bind the pasta? I'm not sure if anything else would work.

1-1/2 packages silken tofu (12.3 oz)
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
2 teaspoons energy egg replacer (without liquid)
