I realized last night that my chili is so much more about the vegetables than the meat
I use turkey or chicken usually, i'm not a fan of beef and it's too fatty
and i start out with a whole onion and a couple jalapenos, cook them until .. cooked, then add the tomatoes, I buy organic canned tomatoes, and then mexi-corn, and beans, and cilantro, and more peppers if i have them - so basically it's very colorful and nutricious and tasty
and then the meat which I cook separately and then mix it all together and let the meat (seasoned with chilli seasoning) absorb some of the juices
chris loved it
and i thought it was pretty delish myself
and i felt good about eating more vegetables than meat

I love chilli. It's probably one of my favorite foods. How much do you use of each ingredient? I should try it out.
hmm i'm not really sure, i kinda just play it by ear I guess?
well actualy now that I think about it it's pretty much the same every time .. 1 large white onion, 1-2 jalapenos chopped up, 1 regular red/yellow pepper if available, 1 small can of green giant mexi-corn, 1 large can of organic diced tomatoes, 1 ummm 'regular' can of kidney beans, cilantro to taste, pepper, etc.
and in a separate pan i cook the meat - I think it's a pound - of lean ground turkey and I use a packet of chili seasoning, sometimes mix the "regular" and "hot" packets hehe
