Well I would've said something like, "I appreciate your thoughtfulness, but my conscience doesn't allow me to receive gifts associated with this holiday." Fortunately, I didn't have to say that to anyone. There's almost no way to put it without hurting feelings, so I'm glad it didn't come up.
