Haha - me too. I made indian food from a cookbook for Donovan once and he loved it, but the ingredients were so unfamiliar to me, it was tough for me to enjoy cooking it. I think almonds would be good, as long as they're toasted. Maybe you could actually try sauteeing them with olive oil and some crushed garlic, so they'd get toasted but not have a sweet almond taste (unless that taste is what you're after!) and then use that flavored oil to hold your filling together.

so, this came out really good. I made a mixture of toasted almonds, sundried tomatoes, basil, lemon, garlic, parm, mozzarella. I had too much filling for the amount of chicken so i topped the chicken rolls with the mixture as well. It tasted really good, and looked really pretty.
Diana I also took your suggestion and made a lemon, white wine, milk & flour type of gravy. (I would have never thought of that) I added some spices to it, and that worked really well with it.
I love concocting new recipes that turn out well!!
