GO!
I want to make some kind of stuffed chicken breast tonight. I don't know what kind. I have a lot of stuff on hand like, mozzarella, sundried tomatoes, spinich, nuts, dried cranberries, etc.
Hmmm, what to do, what to do...
Suggestions?

when I went to arizona, I could have sworn there was "fried chicken ice cream" at someone's house. I was wrong.
this has nothing to do with anything anyone has said here, except "chicken"
LOL maybe fried ICE CREAM?? lol
yeah, it was just fried ice cream flavored ice cream.
you know that they sell that in stores now. i forget what brand it is but vanessa had some a few weeks and was in love with it. basically ice cream with fried sugar tortillas chopped up in it.
How about breadcrumbs, parm, sundried tomatoes, basil and mozz? In white wine/lemon/garlic sauce?
mmm, that sounds good. If i threw some almonds in, do you think that would work? (Slivered, peeled)
Sometimes i think that i don't make italian food a lot because i don't make a lot of pasta...but when i think about it...i am constantly using all the quintisential italian ingrediants...garlic, lemon, basil, parsely, mozzarella.
VIVA ITALIA! lol
Haha - me too. I made indian food from a cookbook for Donovan once and he loved it, but the ingredients were so unfamiliar to me, it was tough for me to enjoy cooking it. I think almonds would be good, as long as they're toasted. Maybe you could actually try sauteeing them with olive oil and some crushed garlic, so they'd get toasted but not have a sweet almond taste (unless that taste is what you're after!) and then use that flavored oil to hold your filling together.
man, i'm so happy i have you as a reference! lol
lol - lemme know how it turns out!
so, this came out really good. I made a mixture of toasted almonds, sundried tomatoes, basil, lemon, garlic, parm, mozzarella. I had too much filling for the amount of chicken so i topped the chicken rolls with the mixture as well. It tasted really good, and looked really pretty.
Diana I also took your suggestion and made a lemon, white wine, milk & flour type of gravy. (I would have never thought of that) I added some spices to it, and that worked really well with it.
I love concocting new recipes that turn out well!!
stuff it all in. lol.
stuffed valentino is your only option.
add bacon or proscuitto inside too.
i actually have some soprasatta at home...i'm not sure how well that would work though.
mmmmm... with some fresh mozzarella mmmmm
