ha! I'm not a flexitarian anymore. Despite persistent efforts, I have yet to be reindoctrinated in vegetarianism by the large portion of my congregation that are vegetarians. I AM throwing a Luau next weekend for the families in my congregation with young kids. Food ideas so far: pineapple stuffing, banana bread/muffins with macadamia nuts, coconut shrimp, apricot salad with almonds and raisins, sweet and sour chicken, brown rice, mango or papaya salsa, guava jelly. A guest is preparing poi for me. Any other ideas? Preferably vegetarian. My mind automatically goes to pork, but so few of the guests will eat it that it's not worth it.
