Ok, so i didn't make thai last night. I made kind of an asian fusion. It came out pretty good. I cooked fresh japanese noodles, and put them in ice water to cool them. Then i took 2 cups of shredded rotisserie chicken and mixed that with shredded broccoli, carrots & cabbage. (the mix is by the bag salads) I added a fair amount of toasted sesame seeds to the noodles, sliced toasted almonds & scallions. And i mixed it all together with Asian dressing. (Soy sauce & ginger dressing). It was a quick, healthy summer dinner!
