Shepherd's Pie

3 large Idaho potatoes, peeled and cubed
Coarse salt
2 tablespoons EVOO - extra-virgin olive oil - 2 turns of the pan
1/4 pound smoky bacon or turkey bacon, chopped
1 1/3 pound ground turkey breast
1 tablespoon smoked paprika, available in small cans on spice aisle of market
(You may substitute 1 1/2 teaspoons each sweet paprika and cumin combined)
Coarse black pepper
2 tablespoons, 5 or 6 sprigs, fresh thyme leaves
1 medium onion, chopped
2 carrots, peeled and diced
3 ribs celery from the heart, chopped
1 small red bell pepper, seeded and chopped
2 cups frozen peas
2 tablespoons all-purpose flour
2 cups chicken broth
1 cup sour cream, divided
3 tablespoons butter
1 large egg, beaten
10 to 12 blades fresh chives, chopped or snipped

Bring a medium pot of water to a boil, salt it, and cook the potatoes until tender, 12 to 15 minutes.
Heat a deep, large skillet over medium-high heat. Add EVOO, 2 turns of the pan, to the skillet. Add bacon and brown it up, then add ground turkey to the pan and break it up. Season the turkey with smoked paprika, salt and peppe,r and thyme. When turkey browns up, add: onions, carrots, celery. Season the veggies with salt and pepper. Cook 5 minutes, then add red pepper and peas cook another 2 minutes. Stir in flour and cook flour 2 minutes. Whisk in broth and combine. Add 1/2 cup of sour cream and combine. Simmer mixture over low heat.

Preheat your broiler to high.

When potatoes are tender, add a ladle of cooking water to the egg. Drain potatoes and return to the warm pot to dry them out a little. Add remaining 1/2 cup sour cream, butter, half of the chives, and salt and pepper. Smash and mash the potatoes, mashing in the beaten, tempered egg. If the potatoes are too tight, mix in a splash of milk.

Pour turkey mixture into a medium casserole dish. Top turkey with an even layer of smashed potatoes and place casserole 5 inches from hot broiler. Broil the potatoes until golden at edges and remove the casserole from the oven. Garnish the casserole with the remaining chives and a sprinkle of smoked paprika.

I made this last night and it came out REALLY good. Austin & I loved it. Just a few side tips if you want to make this. I got this from the Food Network Show: 30 Minute Meals-Definatly DOES NOT take 30 mins. I checked the clock when I started: took me over an hour, from start to finish. Second, it's marked "Easy" I didn't think it was that easy. It was more "medium difficulty". Just because you had to be doing 10 things at once. Also, it doesnt say anything about draining the bacon, but if you make it I would, cuz there was some excess oil at the bottom of the dish.
Lastly, it says this is 4 servings, it's at least 6 servings, there was so much leftover. But it was a really good meal, and when it's done, it looks like it was a difficult meal to make, (so it's perfect to bring to someones house, so they think you've been slaving for hours, haha)

oh, and I made biscuits w/ it. They went perfect.

how about coffee thats made from an animal eating the coffee bean, then it passes through it's system, and he poops it out, and thats what they make the coffee out of.

taco shells for tacos:

all you do is put cooking oil (your choice) in a frying pan, make sure the whole bottom of the pan is covered w/oil.

turn on the heat on a low to medium setting, take one corn tortilla and place it in the pan and once it gets warm and a little bubbly (the toritlla) fold it over with some tongs and let it get warm but when you fold it over dont fold it over all the way, hold one side up and then flip over and do the same and wait until it gets crunchy (depending on what you like) and then take it out and let it cool and fill with the meat of your choice preferably carne asada- lol) and there you have a homeade taco shell. =)

Making the shells is pretty easy you listed the ingredients and it takes 2 seconds to roll them out.

When people post things about food, give em props, dont smack em down.

well how long does it take you to cook this slow cooked meal? i dont know about you, but i dont have the time to slave over a stove... id be content with kt making me peanut butter and jelly sandwhiches for dinner.

Id have to say... look around you, Do you see signs for... "SLOW COOKED MCDONALDS" or "OVEN COOKED FLAME BROILED AND MARINATED BURGER KING"? Negative... people wnat something they can shove in their mouths as fast as possible. People complain about when you go to a restaurant and it takes 45 min to get food... So im gonna have to give ya a big fat NO on the majority of the people wanting meals like that... we are a society that thrives on tv dinners now adays....

mike mike mike. come on. the reason people go to fast food places may be RARELY because they are craving it, but probably 98% of the time, it's b/c it's quick & cheap. if they could afford to have 5 course gourmet meals served to them in the same amount of time, thats what they'd choose.

besides, i like cooking, so being in the kitchen for a few hours is fun. (if i have the time) and the satisfaction is great when everyone enjoys your cooking.

HAHAHAHA i was wondering why you wanted to know about how to make taco shells. i'm like it's so easy.

ok to make flour tortillas:

you mix flour, baking powder salt and warm water adn some use lard in theirs but i dont, i'm not THAT downhome mexican. roll the dough into a ball, then flatten it (like you're making pizza) then put on a griddle and then go from there.

i haven't made corn in like forever cause it's a little more time consuming but its the same ingredients of flour but you use more cornmeal and less flour.

you can also add butter, i forgot about that. regarding measurments, it all depends on how much you wnat to make. i just know so for me it's a part of this a part of that etc.

they're SO easy and only take a minute or so. not a long time but mixing the ingredients till it gets all doughy is not fun.

no what i meant was, the same way you'd say it's not italian or not right to make REAL pasta with prego, this is not at all the real way to make this. The REAL way is with lamb. But the americanized way is spiced beef. I can't even fathom what it is like with turkey. WHy would some schmuck change it so much and still call it this?
