A few months ago, I got a huge cookbook on sale called "The New Complete Book of Breads". I read through the whole thing, made a few simple sweet breakfast breads, but now I want to tackle french breads and other breads that take a little skill. I'm going to try a simple italian bread tomorrow, and I'll post my adventure.
Basically, it's flour, water, yeast, eggs and olive oil kneaded and rested so the crust becomes crunchy and the inside is all chewy. I'm also going to use my pizza stone to cook it instead of a boring sheet pan, because I think that'll make it nice and toasty.
The cookbook also has instructions for building your own wood-burning oven. How cool is that!? I'm totally going to build one when we buy a house. There's nothing like the taste of wood-cooked breads and even veggies.

in belize we bought bread from this lady and it was unbelievable. it was a honey whole wheat i think... best bread i've ever had, i loved it
oh, and scones, i love cranberry scones especially. The recipe i did called for an orange glaze, which I made but I prefer it without the glaze, it becomes too sweet with it. Mmm, i haven't made them in a long time.
I love banana nut bread and zucchini bread. I don't have the recipes with me though.

I'm about an hour into my first breadmaking - the dough was super sticky and sounded like it was going to break my food processor, but I think it's supposed to be like that (?). It's rising right now - the first of 3 risings. The book says it should triple in volume and touch the plastic over the bowl - mine's been rising for 1 out of 2 hours and it's already touching the plastic. I think it might take over my whole house.
For my first loaf, it came out pretty good. Not too dense, pretty chewy and crunchy. I want it REALLY chewy, though, so I'm going to try another recipe. Things I learned: DON'T put cornmeal all over the bottom of your baking sheet. It will burn. I'll put it directly under the dough next time.

I have a friend who took a 3 day course on baking bread at the New York Culinary Institute. She said it was great though a little pricey.
