I love Shreeemps
So I made shrimp scampi last night, I coudlnt' find a recipe that I really liked so I just combined a couple of them. And it came out marvelous I must say. I have a picture of it even.. but it's on my home computey. Haha. Here it is for any of you who love shreemps... and i'm not good with measuring exactly how much stuff I used, so .. just do it to taste or whatever.
This makes about 2 servings:
About 1/2 pound of shrimp (obviously deveined, with the shell and tail removed)
a few spoonfuls of olive oil
about 1/2 stick of butter
about 4-5 garlic cloves, minced
about half of a vidalia onion, chopped
about half of a red bell pepper, chopped (for color!)
One small tomato, choopped into tiny pieces
a little bit of red or white wine, whichever you like
Parsley
Oregano
Salt & Pepper
A couple drops of lemon juice
annnnnd then
Melt the butter and olive oil in a large frying pan or wok. I prefer my wokkie. Then add the garlic, onion, red pepper, tomato. When the onion turns clear and the pepper is soft, add the wine, lemon juice, and whatever spices you want to add like parsely and oregano, and the lemon juice. Simmer for about 2 minutes, then add the shrmip, and cook until they shrink and curl up a bit, hehe. Simmer for.. hmm about 5 minutes I'd say.
Serve over your favorite pasta or rice. I served it over low-carb pasta and it was I must say... heavenly.
