easy recipe
by I tried this recipe tonight and Mike liked it so much he's begging to have it every night. It's really funny cause it's so simple and vegetarian. He looked at it and said "what is this crap, spinach?" LOL.
Avocado-Spinach Quesadillas
4 10 in. flour tortillas
1/2 lb. pepper jack cheese, shredded
1 avocado, sliced
1 Tbsp. olive oil
1 tsp. sour cream
3/4 lb. spinach leaves, chopped
1/3 cup salsa
1. Preheat oven to 450. Lightly oil one side of each tortilla and place them oiled side down on a baking sheet. Layer cheese and avocado on one half of the tortillas and bake 4 minutes.
2. While tortillas are warming, mix olive oil with sour cream in a bowl. Add spinach and salsa, and toss. Top tortillas with spinach mixture and fold in half. Serves 4.
