What I'm going to try this weekend:
1. Marinade chuck cubes, trimmed, in burgundy wine and a few thyme sprigs overnight.
2. Pat cubes dry, discard wine and herbs. Salt, pepper and flour cubes. Warm olive oil and a little manteca in a large pot. Brown meat in batches and reserve.
3. Add more oil to pot if necessary; saute 1 large onion, finely chopped, until translucent. Add 3 cloves garlic, finely chopped. Add chili powder, cumin, salt, pepper, paprika, red chile flakes, 2 bottles of beer and a few cans of chopped tomatoes. Bring to a boil.
4. Add meat back in and simmer for about 2 1/2 hours. Add dried chipotle. Add 1 can black beans or kidney beans. Simmer for 1/2 hour more (or so total cooking time is about 3 hours). Add 1/4 c. of bitter chocolate and stir to blend.
5. Serve over white rice and enjoy!

On rainy, cold days like today, all i want to do is stay home and cook & bake.
Oh man, that would be so great! I keep daydreaming about running a catering/personal chef biz and just cooking all day. Well, cooking and keeping meticulous account of time/travel/expenses for taxes. So I guess I either want to be a caterer or an accountant. :P

It's completely lame that I still haven't made this. It would probably freeze really well, too. I don't think it'll happen this weekend either, because we have our circuit assembly. I've also had some roasted chicken cubed in tupperware in my fridge for like a week, waiting to be put into soup. I've been so lazy about cooking for the past couple weeks.
